SPOTTED DICK

And Now For Something Completely Different

In "Harry Potter and the Goblet of Fire" Spotted Dick was on the menu for the opening day feast. (In the book, but I don't recall it being in the film.) Being a Potter fan I had to have some spotted dick, but what was it? I love the information age! Spotted Dick is a traditional english baked pudding (nothing like the gooy glop we americans are used to!) Where the name comes from has been lost to time, but there are many educated guesses. (Have fun lookin' them up!) It is traditionally made with suet* which is hard to find in the U.S. not to mention just a bit on the disgusting side for my tastes. However it works well with butter instead of suet so there. It is supposed to be steamed but as W.C. Fields said, "Anything worth having is worth cheating for," so I cheated. I placed a medium sized covered glass baking dish half filled with hot water in my oven, after several hours of testing I found that my oven would bring the water to just at the boiling temperature, and hold it there when set to 250 ā„‰. I first calibrated my food thermometer with boiling water to find it's reading at the boiling point. It was a little bit of work, but I don't get out that much and now I know that my oven will match the heat of a steamer at 250 ā„‰ and since there was no steam I threw in a little more rum, although the cover should compensate somewhat for the difference. Anyway my dick did look like the photos I have seen on the internet, so I feel that my dick will stand up to anyone else's.

   (* Suet is the hard white fat on the kidneys and loins of cattle.)

THE STUFF:

1 cup (5 oz) flour
1 cup (5 oz) fresh bread crumbs
2 tsp Baking Powder
1 tsp cinnamon
1tsp ground cloves
1 tsp nutmeg
1/2 tsp salt
6 oz soft butter *1
3 oz brown sugar
3 eggs (beaten)
6 oz currents
3 oz golden raisins
( If you feel your dick is too spotty try using a bit less currents)
(I prefer a very spotty dick)
1/2 cup milk
2 oz rum (I used Captain Morgan Dark Spiced Rum 100 proof)
1 more oz of rum to pour over it when it comes from the oven

*1 I once used 8 oz of butter with good result. Keep in mind that recipes of this sort are like the Pirate's Code, "They're not so much rules Miss Turner, as they are guidelines."

Custard
3 egg yolks
1 Tbs sugar
1/2 pint milk
1/4 tsp vanilla

What to do with the stuff:

Generously butter and flour a 9 inch round covered glass baking dish.
Mix up the stuff and put it in the baking dish. Put on the cover. Stick it in the oven at the temp you determined from the above process. (250 ā„‰ for me) Bake for 2 hours. (or steamer for 2 - 2.5 hrs) Remove from oven, pour 1 oz of rum over it and recover.

Make the custard to pour over your spotted dick when serving.

 

Custard preparation

Whisk the yolks and sugar together in a bowl. Heat the milk in a saucepan until nearly boiling. Whisk the hot milk gradually into the egg mixture over indirect heat until it is thick enough to coat the back of wooden spoon.

Or you can buy some custard and warm it up!
